Potato bites with herring

1 potato
50 g cream cheese
100 g herring pieces
1 beet
1 half red onion
to taste dill or lettuce
  1. Boil potato and beet until tender. Drain and rinse with cool water.
  2. Cut potato in half. Scoop a bit of the center of potato half out.
  3. Fill the scooped out area with 1-2 tbsp. of cream cheese. Then top with sliced beet and herring pieces.
  4. Sprinkle with chopped onions and dill. Enjoy your meal!
